Chocolate Avocado Brownie (Vegan and Gluten Free)

I finally made a yummy vegan brownie!  My kids love it and I love that it is pretty nutrient dense!  I just have to make it while my husband isn't looking.  Because he is the only person on this planet that does not like avocados! lol

 

INGREDIENTS:

  • 1/2 ripe avocado (I used 1 whole because I love avocados!)

  • 1 cup + 2 tablespoons organic coconut milk (or other plant based milk that you prefer)

  • 1/4 cup pure maple syrup

  • 1/2 cup coconut sugar

  • 1 cup coconut flour

  • 1/2 cup unsweetened cocoa powder

  • 1 teaspoon baking soda

  • 1/2 teaspoon sea salt

  • 1/2 cup dark chocolate chips

    DIRECTIONS:

  • Preheat oven to 350° then lightly grease an 8x8" baking dish (I love using Pyrex)

  • In a blender, combine the avocado, coconut milk, maple syrup and coconut sugar. Blend for about 15-20 seconds, until smooth.

  • In a large bowl, combine the coconut flour, cocoa powder, baking soda and sea salt. Stir together.

  • Combine wet ingredients with the dry ingredients in the bowl.

  • Add chocolate chips and stir together until combined.

  • Pour batter in greased baking dish, sprinkle more chocolate chips on top if desired.

  • Bake for 15-20 minutes, until set. You should be able to stick a fork in the center and have it come out clean.

  • Allow to cool for at least 15 minutes before cutting and serving.

I found the brownies to be more fudgey after it sits in the fridge overnight.  I don't feel guilty letting my kids have this for breakfast! = D
